Cracklin Bran Sweet Potato Bake

Ingredients

  • 2 cans (24 ounce each) sweet potatoes (liquid removed and mashed)
  • 5 T butter, softened
  • 1/4 c. orange juice
  • 1/2 teaspoon salt
  • 2 c. miniature marshmallows
  • 1 c. Kellogg Cracklin Bran cereal (crushed to 1/2 c.)

Directions

  1. Put together sweet potatoes, 4 tbsp butter, orange juice and salt. Beat till smooth (with electric mixer). Stir in 1 cup marshmallows. Spread in 10x6x2 inch (1 1/2 qt) glass baking dish. Top with remaining marshmallows.Heat remaining butter. Put together with Cracklin Bran cereal. Sprinkle over marshmallows. Bake 350 F. (20 min or possibly till heated through). Serves 8.
