Ingredients

  • 1/2 pkt (4 to 6-ounce) wild rice
  • 2 pkt (6-ounce) frzn crabmeat, thawed, liquid removed and flaked
  • 1 pkt (6-ounce) cooked and peeled shrimp, thawed
  • 1/2 c. Cooked and liquid removed english peas
  • 1/2 c. Minced onion
  • 2 Tbsp. Minced pimiento
  • 1/2 c. Mayonnaise
  • 1 Tbsp. Lemon juice
  • 1 tsp Curry pwdr Lettuce Cherry tomatoes or possibly tomato wedges

Directions

  1. Cook rice according to directions. Combine rice, crabmeat, shrimp, peas, onions and pimiento. Stir lightly. Combine mayonnaise, lemon juice and curry pwdr. Stir into crab mix. Cover and chill. Serve on lettuce leaves. Garnish with tomatoes.
  2. Yield: 6 to 8 servings.
