- COUSCOUS PIE
- 2 cups couscous
- 3 medium-sized onions, finely chopped
- 2 1/2 large sweet peppers, finely chopped
- 1 egg, beaten
- 4 pimento peppers, finely chopped
- 2 cups grated cheese
- 2 tbsp salted butter
- 1 cup evaporated milk (we used the Carnation brand)
- 1 tsp. black pepper">pepper or white pepper">pepper
- 1 tin (425 g/15 oz) cream style corn

%20is%20now%20becoming%20a%20favourite%20at%20home%20because%20it%20is%20a%20light%20and%20wonderful%20substitute%20for%20rice%20when%20I%20don%E2%80%99t%20feel%20like%20cooking%20rice%20at%20all.%20It%20is%20popular%20in%20North%20Africa,%20Egypt%20and%20the%20Middle%20East%20and%20is%20made%20from%20millet,%20barley,%20or%20cornmeal.%20This%20is%20also%20a%20great%20choice%20because%20it%20has%20a%20low%20fat-calorie%20ratio.%20Each%201%20cup%20serving%20(100%20grams)%20contains%20about%20112%20calories,%203.8%20grams%20of%20protein,%201.4%20grams%20of%20dietary%20fiber,%20and%2058%20mg%20of%20potassium.%3C/p%3E%3Cp%3ERecently,%20I%20have%20grown%20to%20love%20cooking%20couscous,%20especially%20using%20it%20as%20a%20substitute%20in%20some%20of%20my%20dishes.%20Although%20couscous%20is%20not%20considered%20gluten-free%20because%20of%20the%20semolina,%20depending%20on%20the%20grain%20it%20is%20derived%20from%20it%20can%20be%20gluten%20free%20as%20well.%20%20Its%20versatility%20and%20texture%20calls%20for%20much%20creativity%20in%20the%20dishes%20and%20now%20inspires%20me%20with%20ideas%20to%20incorporate%20into%20a%20number%20of%20traditional%20recipes.%3C/p%3E%3Cp%3EYeah%20ah%20know%20yuh%20does%20get%20bored%20with%20rice%20all%20de%20time%20ent?%3C/p%3E%3Cp%3EThis%20is%20good%20news,%20especially%20for%20those%20who%20follow%20a%20healthy%20diet%20but%20and%20would%20like%20to%20try%20something%20a%20little%20different%20than%20the%20traditional%20foods%20for%20a%20change.%20%20The%20best%20way%20to%20think%20of%20couscous%20is%20like%20little%20grains%20of%20pasta%20then%20move%20on%20from%20there.%20Because%20of%20its%20grainy%20look%20and%20feel%20it%20also%20substitutes%20well%20for%20rice%20too.%20%20If%20you%20keep%20that%20in%20mind%20the%20ideas%20for%20dishes%20where%20you%20can%20use%20it%20will%20come%20to%20mind.%20I%20%20must%20say%20that%20couscous%20can%20be%20a%20welcomed%20addition%20to%20your%20repertoire%20of%20cooking,%20once%20mastered,%20especially%20if%20you%20are%20searching%20for%20variety%20and%20versatility%20in%20your%20meals.%3C/p%3E%3Cp%3ENow,%20a%20pack%20of%20couscous%20is%20not%20cheap,%20but%20it%20yields%20very%20well.%20%20One%20cup%20soaked%20couscous%20would%20yield%20a%20little%20more%20than%202%20cups;%20and%20cooked%20%20would%20yield%20as%20much%20as%202%201/2%20cups.%20%20I%20got%20the%20idea%20of%20making%20a%20couscous%20pie%20from%20Mrs.%20Trevene%20Hope,%20a%20fan%20of%20the%20blog,%20and%20just%20thought%20I%20should%20roll%20with%20it.%20Actually,%20she%20made%20a%20quinoa%20pie,%20but%20I%20didn%E2%80%99t%20have%20much%20of%20that%20grain%20at%20the%20time%20so%20I%20opted%20to%20experiment%20with%20couscous%20instead.%20Maybe%20a%20quinoa%20pie%20will%20be%20in%20the%20pipeline%20soon%20now%20that%20I%E2%80%99ve%20mastered%20couscous%20lol!%3C/p%3E%3Cp%3EThis%20pie%20is%20prepared%20in%20a%20similar%20way%20as%20you%20would%20prepare%20one%20of%20my%20favourite%20pies,%20corn%20pie.%20%20It%20turned%20out%20to%20be%20remarkably%20tasty%20and%20cuts%20smoothly%20with%20a%20knife%20almost%20like%20coo%20coo.%3C/p%3E%3Cp%3EPlace%20the%20two%20cups%20of%20couscous%20in%20a%20deep%20bowl.%3C/p%3E%3Cp%3EAdd%20water%20(enough%20to%20cover%20the%20couscous)%20at%20room%20temperature,%3C/p%3E%3Cp%3Eand%20leave%20to%20soak%20for%2010%20%E2%80%93%2015%20minutes.%20Fluff%20with%20a%20fork%20and%20set%20aside.%3C/p%3E%3Cp%3EIn%20a%20deep%20pot,%20saute%20the%20%20onion%20in%20butter%20until%20translucent.%3C/p%3E%3Cp%3EStir%20in%20the%20rest%20of%20vegetables%20and%20cook%20for%20another%205%20minutes.%3C/p%3E%3Cp%3EAdd%20the%20milk%20and%20heat%20for%202%20more%20minutes.%20%20Remove.%3C/p%3E%3Cp%3EMix%20together%20the%20couscous,%20cream%20style%20corn%E2%80%A6%3C/p%3E%3Cp%3E%E2%80%A6egg,%20sauteed%20vegetables%20and%20black%20pepper%E2%80%A6%3C/p%3E%3Cp%3EAdd%201%20cup%20of%20cheese.%3C/p%3E%3Cp%3EMix%20well.%3C/p%3E%3Cp%3EPour%20into%20a%20baking%20dish,%2012%E2%80%B3%20x%208%E2%80%B3%20x2%E2%80%B3.%3C/p%3E%3Cp%3ETop%20with%20the%20remaining%20cup%20of%20cheese.%3C/p%3E%3Cp%3EBake%20in%20an%20oven%20at%20350%20degrees%20F%20for%2030%20minutes%20or%20until%20golden%20and%20the%20cheese%20bubbles.%3C/p%3E%3Cp%3EI%20can%20only%20describe%20this%20couscous%20pie%20with%20one%20word;%20Delicious.%3C/p%3E%3Cp%3EAh%20gone%3C/p%3E){kind=link}
