Ingredients
- 2 c. diced, peeled, cooked potatoes
- 2 hard cooked large eggs, minced (optional)
- 1/2 c. sliced celery
- 1/3 c. sliced radishes
- 1/3 c. minced scallions
- 8 thinly sliced green olives
- 1 T olive liquid (from jar of green olives)
- 2 T light Italian dressing
- 1/4 c. plain nonfat yogurt
- 2 c. low fat cottage cheese
- Salt and pepper to taste
- Paprika, optional
Directions
- In a bowl, put together ingredients in the order listed. Refrigerate for several hrs and pile on lettuce.
