One Sundays, after church, we enjoying treating ourselves to breakfast at a local restaurant. It's a nice treat to have someone prepare pancakes, and all the fixin's so that I can relax and not have to worry about kitchen cleanup.
Still, I do enjoy making breakfast at home, when I have time. I do enjoy making homemade pancakes (not from a box mix). I have a nice assortments of pancake recipes that I have shared with all of you--from Swedish pancakes to German Pancakes-- and even Lemon-Blueberry Ricotta pancakes. My Best Pancake recips has remained the top favorite among my men, and I have to agree that they are fluffy and delicious! But, now, I think these pancakes are going to be moving up in rank as our favorites.

.%20%20I%20have%20a%20nice%20assortments%20of%20pancake%20recipes%20that%20I%20have%20shared%20with%20all%20of%20you--from%20Swedish%20pancakes%20to%20German%20Pancakes--%20and%20even%20Lemon-Blueberry%20Ricotta%20pancakes.%20%20My%20Best%20Pancake%20recips%20has%20remained%20the%20top%20favorite%20among%20my%20men,%20and%20I%20have%20to%20agree%20that%20they%20are%20fluffy%20and%20delicious!%20%20But,%20now,%20I%20think%20these%20pancakes%20are%20going%20to%20be%20moving%20up%20in%20rank%20as%20our%20favorites.%3C/p%3E%3Cp%3EA%20recently%20recorded%20episode%20of%20Food%20Network's%20Pioneer%20Woman%20featured%20Ree's%20Cornmeal%20Pancakes%20with%20Blueberry%20syrup%20grabbed%20by%20attention.%20%20(I%20once%20made%20a%20Cornmeal%20and%20Ricotta%20waffle%20recipe%20that%20was%20memorable,%20in%20a%20good%20way--%20though%20a%20bit%20more%20work.)%20%20Cornmeal%20pancakes?%20Yes!%20%20%20%20The%20batter%20uses%20everyday%20ingredients%20that%20you%20have%20on%20hand--%20flour,%20sugar,%20eggs,%20baking%20powder,%20pure%20vanilla%20and%20milk.%3C/p%3E%3Cp%3ERee%20made%20a%20blueberry%20syrup,%20that%20looked%20really%20good.%20However,%20I%20had%20some%20frozen%20raspberries%20that%20I%20wanted%20to%20use%20up--%20and%20so%20I%20made%20a%20quick%20raspberry%20compote.%20%20(Really,%20a%20compote%20is%20fruit%20cooked%20with%20sugar%20and%20water.)%20%20The%20compote%20took%20about%20ten%20minutes%20to%20make,%20and%20I%20set%20it%20aside%20to%20cool%20to%20room%20temperature.%3C/p%3E%3Cp%3EI'm%20sure%20that%20these%20pancakes%20would%20be%20good%20with%20pure%20maple%20syrup.%20%20But,%20adding%20the%20fruit%20topping%20will%20bring%20this%20up%20to%20a%20whole%20new%20level%20of%20deliciousness.%3C/p%3E%3Cp%3EFrom%20start%20to%20finish,%20breakfast%20was%20on%20the%20table%20in%2030%20minutes.%3C/p%3E%3Cp%3ETASTING%20NOTES:%20%20By%20the%20smile%20on%20my%20husband's%20face,%20I%20could%20tell%20that%20these%20pancakes%20were%20a%20hit.%20These%20pancakes%20were%20surprisingly%20tender%20and%20fluffy.%20%20The%20cornmeal%20added%20a%20subtle%20crunch%20and%20a%20perfect%20balance%20of%20corn%20flavor.%20%20The%20vanilla%20extract%20added%20a%20little%20sweetness,%20but%20not%20too%20much.%20%20The%20sweet-tart%20raspberry%20compote%20gave%20a%20some%20zip%20and%20pretty%20color%20to%20the%20breakfast.%20%20I%20would%20say%20that%20these%20are%20100%25%20husband%20approved,%20as%20he%20went%20back%20for%20seconds.%20I'll%20be%20making%20these%20again,%20for%20sure.%3C/p%3E){kind=link}
