Ingredients
- 8 x live soft-shelled crab
- 2 c. buttermilk
- 2 x egg
- 1 c. yellow cornmeal
- 1 c. flour
- 1 x salt and pepper
- Â Â canned chipotle pepper, pureed
- 1 Tbsp. paprika
- 1/2 c. shredded cilantro
- Â Â vegetable oil, for frying
Directions
- Preheat the vegetable oil to 350 degrees Fahrenheit.
- Whisk the buttermilk, Large eggs, pureed chipotles, salt and pepper together. Add in the crabs and soak them for an hour. Put the cornmeal, paprika, flour and more salt and pepper in a bowl and mix them well. Drain the marinated crabs and dip them in the dry ingredients to coat them well.
- Deep fry them in the vegetable oil till golden brown, about 5 min.
- Serve on a large cheddar buttermilk biscuit. Layer thinly sliced cucumber and watercress on the biscuit and put a warm crab on top.
- Preparation time is 30 min.
