  • 1 pkt Jiffy cornbread mix, cooked
  • 1 med Bell pepper, minced
  • 2 lrg Tomatoes, minced
  • 1 lrg Onion, minced
  • 1 pkt Cooked ham, minced
  • 1/2 c. Sweet pickle relish
  • 1/3 c. Sweet pickle juice
  • 1 c. Mayonnaise
  • 3 x Large eggs, hardboiled
  • 6 slc Bacon, cooked

Directions

  1. Prepare mix of bell pepper, tomatoes, onion, ham, pickles, juice, and mayonnaise. Crumble cornbread. Alternate layers of cornbread and a layer of mix. Crumble bacon over last layer and top with sliced boiled Large eggs.
  2. Chill overnight.
