Corn Souffle Recipe

This is a wonderful corn casserol I make every Thanksgiving and Christmas ...however, this side dish is a compliment to many entrees! I have never met a person that did not like it.

Ingredients

  • 1 box Jiffy corn muffin mix
  • 1 can cream corn
  • 1 can regular corn, drained
  • 2 eggs
  • 1/2 c. sour cream
  • 1 stick butter

Directions

  1. Melt butter, add slightly beaten eggs and sour cream. Add corn; stir. Add Jiffy corn mix; stir again. Bake in a greased 9x9 pan at 350 degree oven uncovered for 45 minutes. Sometimes I double this recipe and use a 9 x 13 pan.

      This was very good. My middle child loved it and I liked it too. My hubby thought too much corn for him and I think my eldest would of liked it but thought it was kind of weird. so, it's a 50/50 on who might like it but I enjoyed it. You can eat it cold too. I can't really describe the taste. I cooked it last week and its been a while.

            Everyone said this was the best Dish they ate + raved on and on about it. I did not have any jiffy so I followed the corn bread recipe of 1 cup flour + corn meal, 1 1/2 t baking powder, 1 T sugar + 1/2 t salt (instead of the Jiffy part. One person said this was better than dessert.

                I find making two 9x9's is better than doubling the recipe and using a 9x13. Can't explain that, but for me it works. Very good.

                  I need to make the corn casserole for about 40 people. Do I really need 80 eggs and 40 boxes of jiffy. Sounds like a lot. How many does the 9 X 13 feed from one recipe

                      I always wanted to make a souffle. Chocolate is more appetizing for my kid, but this looks good to me. I will have this tried soon. Thanks for sharing :)

                          I love this recipe and I have made this recipe for years, but would like suggestions on preparing it using a substitute for the Jiffy Corn Muffin Mix. I no longer use conveneince foods.

                                Is the jiffy mix stired in or put over the top? looking forward to making this, my daughter LOVES creamed corn and I thought this would be a different way to enjoy her favorite veg. Thanks.
