Ingredients

  • 1 1/4 cups yellow cornmeal
  • 1 1/4 cups flour
  • 1/3 cup sugar
  • 1 tbsp baking powder
  • 1 tsp salt
  • 2 eggs, lightly beaten
  • 1 1/2 cups milk
  • 3/4 cup unsalted butter, melted and cooled slightly

Directions

  1. start with all ingredients at room temp
  2. preheat over to 350
  3. grease well 9 cups of a 12 cup muffin tin
  4. in a large bowl mis together the dry ingredients, making a well in the center. stir in the liquid ingredients until just combinedm, being careful not to overmix. the batter may be lumpy. fill the muffin cups about 3/4 full, bake for 18-20 min until lightly golden a tester should come out with moist crumbs attached, do not overbake
