Wonderful local delicacy served in the eastern part of nigeria. it makes a good delight for lunch and can be good for picnic .
it is mainly corn though dry corn can be used but fresh corn is gives the best result.

Ingredients

  • 5 cups of fresh corn (grated or coarsely ground)
  • handful of scent leaf (chopped)
  • dry fish (mackerel)
  • 1 onion (sliced)
  • prawn
  • warm water (50cl)
  • pepper
  • salt
  • red oil
  • maggi
  • crafish (ground)
  • nylons (for wrapping)
  • extra water (for cooking)
  • garden egg leaf (optional)

Directions

  1. grind the corn such that it will be coarse
  2. chop the scent leaf and garden egg leaf
  3. flake the dry fish and boil till tender
  4. pour the ground corn into a bowl
  5. add oil and mix well to a bright yellow color
  6. add the onions, leaves, prawn,crafish
  7. add water and stir the mixture till its well blended
  8. mix in all other ingredients and taste for salt
  9. scoop the mixture into the nylon little at a time (one soup spoon in each nylon)
  10. ensure you tighten the nylon wrap to avoid water sipping into it while cooking.
  11. place all wraps into a pot and add the extra water
  12. boil for 60mins
  13. serve with a glass of juice or coffee.
