  • 1 (17 ounce) can cream style corn
  • 1 egg
  • 1 (8 1/2 ounce) box Jiffy corn muffin mix
  • 1/2 c. lowfat milk

Directions

  1. Empty can of corn in large mixing bowl. Rinse empty can with lowfat milk. Add in egg; mix well. Add in box of corn muffin mix; blend. Spoon into hot frying pan with a little grease and fry like pancakes, turning when edges start drying. One tbsp makes a good size fritter.
