Ingredients

  • 1 lb oysters shucked
  • 1/2 c. cornmeal
  • 2 tsp chili pwdr
  • 1 tsp cayenne pepper
  • 1 tsp onion pwdr
  • 1 tsp garlic pwdr
  • 1/2 tsp black pepper
  • 1/2 c. salad oil

Directions

  1. Drain the oysters and reserve.
  2. Combine the cornmeal, chili pwdr, cayenne, onion pwdr, garlic pwdr, and black pepper.
  3. Dredge the oysters in the cornmeal mix to coat well. Heat half of the oil in a sauta pan over medium - high heat. Add in half of the oysters and cook till browned, about 1 minute on each side. Repeat with remaining oil and remaining oysters.
  4. Drain the oysters on paper towels till needed.
  5. These fried oysters make wonderful appetizers or possibly components for sandwiches. Adjust the seasoning of the cornmeal mix if you like.
