Ingredients

  • 2 x (16 ounce.) cans cream style corn
  • 1 x (10 ounce.) pkg. frzn minced broccoli, cooked and liquid removed
  • 2 x Large eggs, beaten
  • 1 c. coarse cracker crumbs
  • 1 Tbsp. chopped onion
  • 4 Tbsp. melted butter or possibly margarine
  • 1 tsp salt
  • 1/4 tsp freshly grnd black pepper
  • 1/2 c. coarse cracker crumbs
  • 2 Tbsp. melted butter or possibly margarine

Directions

  1. Combine corn, Large eggs, broccoli, 1 C. cracker crumbs, onion, 4 Tablespoons melted butter, salt and pepper. Pour into a greased 1 1/2 qt casserole. Combine the remaining cracker crumbs and melted butter and sprinkle over the top. Bake at 350 degrees for 35-40 min or possibly till set in the middle.
