Ingredients

Cost per serving $1.58 view details
  • 1 1/2 c. white wine, such as Sauvignon Blanc or possibly Chenin Blanc
  • 1/2 c. water
  • 1/2 c. sugar
  • 1 piece vanilla bean, about 6 inches long, slit open
  • 6 x peaches, peeled, halved and pitted
  • 1/2 c. creme fraiche

Directions

  1. Combine the wine, water, sugar and vanilla bean in a saucepan and bring to a boil, stirring to dissolve the sugar. Boil for about 5 min, till a light syrup forms.
  2. Reduce the heat and slip the peach halves into the pan. Poach the fruit for 5 min, then turn off the heat. Let stand for 1 hour before serving. Or possibly, the peaches may be refrigerated and served cool. They'll keep in the refrigerator in their syrup for several days.
  3. To serve, place 2 peach halves in a bowl along with a little syrup and a spoonful of creme fraiche.
  4. Serves 6.
