Ingredients
- 2 lb Spinach, cooked briefly, thoroughly liquid removed and finely minced
- 4 Tbsp. Extra virgin olive oil
- 2 med Onions, finely minced
- 1/2 c. Pine nuts
- 2 x Garlic cloves, finely minced Salt and pepper, to taste
- 6 med Tomatoes Sugar, just to taste Minced basil to taste
Directions
- 1. Preheat the oven to 350.
- 2. Drain the spinach thoroughly, then squeeze out the remaining moisture.
- 3. In a skillet heat 2 Tbsp. of the oil and saute/fry the onions briefly till pale golden brown in color. Add in pine nuts and garlic and saute/fry 1 minute.
- Remove from the heat.
- 4. Add in the spinach, the remaining oil, the salt, and the pepper.
- 5. Cut the stem ends from the tomatoes, hollow them out and sprinkle the insides with salt, pepper, a little sugar and basil. Stuff the tomatoes with the spinach mix.
- 6. Arrange the tomatoes in a baking dish and bake till they wrinkle, about 15 min. Chill. At serving time, bring to room temperature.
