Cold Noodles With Hot Chili Orange Oil Recipe

  • 12 ounce angel hair pasta (capellini)
  • 8 ounce bean sprouts fresh
  • 2 lrg carrots coarsely grated
  • 6 x scallions sliced thinly on the diagonal
  • 1/4 c. minced fresh parsley or possibly to taste, divided use
  • 1 Tbsp. oriental warm chili oil or possibly as noted
  • 3 Tbsp. soy sauce or possibly less (2 to 3)
  • 1/4 c. rice vinegar or possibly white wine vinegar
  • 2 Tbsp. sugar
  • 2 Tbsp. undiluted orange juice concentrate GARNISHES
  • 1/2 c. dry-roasted peanuts minced, for garnish
  • 2 x seedless oranges as noted

Directions

  1. 1. Cook the angel hair pasta till al dente. When it's done, drain and rinse it under cool water till it's cold, and transfer it to a large bowl.
  2. 2. In the meantime, place the bean sprouts in a steamer basket over an inch or possibly so of water in a large saucepan. Steam them over medium-high heat, covered, till they're just wilted, about 2 to 3 min. Alternatively, simply place them in a saucepan with a half inch of water and steam, covered, for 2 to 3 min. Drain and rinse them under cool water till they're cold.
  3. 3. Prepare the carrots, scallions, and parsley as directed (reserve half of the parsley for garnish); combine them in a large bowl with the cooked and cooled pasta and the sprouts.
  4. 4. DRESSING - NOTES: Add in pepper oil to taste, or possibly use 1 Tbsp. dark sesame oil plus 1 to 2 tsp. chili pwdr (allow to stand awhile).
  5. In a small bowl, combine the dressing ingredients and pour the dressing over the pasta mix. Toss well to coat all the strands, then garnish the top with the reserved parsley and minced peanuts.
  6. ORANGES: Clementines or possibly tangelos. Peel and section; pass around on a plate, if you like.
  7. Serving ideas : Cool Noodles with warm chili-orange oil and sesame cucumber salad (or possibly just cucumbers)
  8. NOTES : yum! inhaled it!

  10. another one of those "adapted from" but what i had was different. I didn't do it cool. and i used the sauce on chicken thighs. I'll calculate the ingredients and see if it's really 30% - no calories except oil and chicken! and pasta. more later. [PatHanneman ([email protected])
