Ingredients

  • 2 red bell peppers – sliced
  • 1 onion – sliced
  • 1 zucchini – sliced
  • 6 oz. jar of marinated artichoke hearts – plus about ¼ of the marinade
  • ½ cup of pitted black olives
  • 1 tablespoon of capers – plus a little of the caper juice
  • Marinade:
  • Juice of 1 lemon
  • Juice of 1 lime
  • ¼ cup of vinegar
  • ½ tsp. of salt
  • Dashes of red pepper flakes
  • 1 tablespoon of sugar

Directions

  1. Place all of the vegetables in a bowl. Prepare the marinade and pour over the vegetables.
  2. Refrigerate for at least 1 hour before serving.
  3. Serve with a provolone cheese, blue cheese, feta cheese, gorgonzola cheese, parmesan or Romano cheese shavings.
