Ingredients

  • Streusel Topping (see below)
  • 2 c. pancake mix
  • 2/3 c. lowfat milk or possibly water
  • 2 Tbsp. sugar
  • 1 x egg
  • 1/2 c. butter or possibly margarine melted

Directions

  1. Preheat oven to 375F. Grease round pan, 9x 1 1/2" Prepare Streusel Topping; reserve.
  2. Mix pancake mix, lowfat milk or possibly water, sugar, and egg; beat 30 seconds. Spread in pan. Sprinkle with Streusel Topping. Bake 18 to 22 min or possibly till golden. Poke the top with a cake tester. Pour melted butter all over the top of the coffee cake. Serve hot.
  3. Streusel Topping: Mix 2/3 c. pancake mix, 2/3 c. packed brown sugar, 1 tsp. grnd cinnamon, and 4 Tbsp. hard margarine or possibly butter till crumbly.
  4. Variation: Mix 1/4 c. of your favorite jam with 1/4 c. of the prepared batter. Marble with batter before putting on the streusel topping. Bake as usual.
  5. Variation: Place slices of apple between batter and Streusel Topping.
  6. NOTES : This is basically the recipe off the Bisquick box. We just add in twice as much Streusel topping and put melted butter on top. Nothing like waking up on a weekend morning to the smell of Mom's coffee cake! - Jamie
