%20if%20I%20had%20the%20slightest%20idea%20what%20to%20do%20with%20Photoshop.%20Now%20don%E2%80%99t%20laugh%20at%20me%20but%20I%20spent%20like%202%20hours%20teaching%20myself%20to%20make%20this%20college%20for%20Pinterest:%3C/p%3E%3Cp%3EWhat%20do%20you%20think,%20was%20it%20worth%202%20hours?%20Ha!%20Actually%20in%20all%20seriousness,%20are%20you%20more%20likely%20to%20pin%20the%20top%20image%20or%20the%20collage?%20And%20why%20am%20I%20going%20to%20all%20this%20trouble?%20Well%20if%20I%20don%E2%80%99t%20use%20Photoshop%20at%20all%20I%20just%20cannot%20see%20paying%20for%20the%20Creative%20Cloud%E2%80%A6%20in%20which%20case%20I%20guess%20I%20am%20looking%20at%20buying%20the%20newest%20Lightroom.%20Or%20something.%20We%E2%80%99ll%20see.%20And%20I%20think%20I%20better%20fogure%20it%20out%20soon%20before%20I%20spend%20more%20time%20figuring%20out%20Photoshop.%20Talk%20about%20not%20intuitive!%20For%20me%20anyway.%3C/p%3E%3Cp%3ESo%20anyway,%20about%20this%20awesome%20cake!%20The%20theme%20this%20month%20for%20Bundt%20Bakers%20was%20Coconut,%20as%20chosen%20by%20our%20host%20Terri%20from%20Love%20and%20Confections%20(as%20always%20serious%20props%20to%20the%20host%20for%20hosting!).%20I%20am%20going%20to%20pause%20right%20here%20and%20talk%20a%20little%20bit%20about%20coconut.%20If%20you%20love%20shredded%20coconut,%20especially%20sweetened%20shredded%20coconut,%20you%20can%20skip%20this%20paragraph.%20But%20I%20hate%20the%20stuff.%20Passionately.%20It%20squeaks!%20And%20is%20too%20sweet!%20And%20as%20a%20result%20I%20always%20thought%20I%20hated%20coconut%20desserts.%20Nope,%20not%20true%20actually.%20I%20discovered%20extra%20virgin%20coconut%20oil%20and%20Bob%E2%80%99s%20Red%20Mill%20Unsweetened%20Flaked%20Coconut%20(Bob%E2%80%99s%20Red%20Mill%20is%20the%20easiest%20to%20find%20and%20the%20first%20I%20tried%20but%20I%20have%20enjoyed%20other%20brands%20as%20well)%3C/p%3E%3Cp%3Eand%20have%20never%20looked%20back.%20So%20if%20you%20think%20you%20hate%20coconut,%20I%20definitely%20recommend%20you%20check%20out%20these%20products%20out%20and%20see%20if%20you%20really%20hate%20coconut!%3C/p%3E%3Cp%3ESo%20referring%20back%20to%20said%20appreciation%20of%20extra%20virgin%20coconut%20oil,%20I%20knew%20I%20was%20starting%20with%20it.%20I%20came%20across%20this%20Coconut%20Oil%20Poundcake%20With%20Almonds%20and%20Lime%20Zest%20from%20Melissa%20Clark%20in%20the%20New%20York%20Times,%20and%20thought%20it%20looked%20wonderful.%20I%20changed%20it%20up%20a%20bit%20though%20because%20I%20also%20decided%20I%20wanted%20to%20amp%20up%20the%20coconut%20flavor%20and%20use%20flaked%20coconut.%20Because%20I%20was%20using%20a%20bundt%20pan,%20I%20could%20not%20bake%20the%20flakes%20into%20the%20cake%20as%20she%20does%20with%20the%20almonds.%20So%20instead%20I%20toasted%20the%20coconuts%20on%20the%20stovetop%20and%20then%20added%20sugar,%20salt%20and%20water%20to%20make%20a%20glaze.%3C/p%3E%3Cp%3EThis%20glaze%20was%20to%20die%20for.%20Both%20my%20girls%20had%20play%20dates%20over,%20and%20every%20kid%20in%20the%20house%20(except%20Sammy%20my%20coconut%20hater)%20was%20trying%20to%20swipe%20the%20dripping%20glaze%20off%20the%20counter%20(the%20spillover%20underneath%20the%20bundt%20cake).%20The%20toasted%20flaked%20coconut%20flavor%20permeated%20the%20glaze,%20and%20the%20salt%20kept%20it%20interesting.%20This%20cake%20was%20a%20huge%20hit%20and%20is%20long%20gone.%3C/p%3E%3Cp%3EBe%20sure%20to%20check%20out%20the%20links%20down%20below%20for%20more%20awesome%20coconut%20bundt%20cakes!%3C/p%3E%3Cp%3ECoconut%20Oil%20Pound%20Cake%20%20%20Adapted%20from%20Melissa%20Clark.%20%20Author:%20TheSpicedLife%20Recipe%20type:%20Dessert%20Cuisine:%20Cakes%20%20%20Ingredients%3C/p%3E%3Cp%3EFor%20the%20cake:%201%20cup%20extra%20virgin%20coconut%20oil%202%20cups%20sugar%201%C2%BD%20cups%20milk%206%20large%20eggs%201%20t%20vanilla%20Zest%20of%202%20limes%203%C2%BD%20(440%20g)AP%20flour%203%C2%BD%20t%20baking%20powder%20%C2%BC%20t%20grated%20nutmeg%20%C2%BD%20t%20salt.%20For%20the%20glaze:%20heaping%20%C2%BD%20cup%20flaked%20coconut%20%C2%BD%20cup%20sugar%201%20cup%20water%20hefty%20pinch%20of%20kosher%20sea%20salt%20%20%20Instructions%3C/p%3E%3Cp%3EHeat%20the%20oven%20to%20350%20degrees.%20Grease%20and%20flour%20(I%20use%20a%20combo%20baking%20spray)%20a%209-10%20inch%20bundt%20pan.%20I%20recommend%20choosing%20a%20bundt%20design%20that%20is%20a%20little%20flat%20on%20top,%20to%20allow%20the%20coconut%20flakes%20somewhere%20to%20stick.%20If%20you%20use%20the%20smaller%20bundt%20pan,%20you%20will%20have%20a%20little%20batter%20leftover%20for%20mini%20loaf%20cakes.%20Set%20aside.%20Melt%20the%20coconut%20oil%20in%20a%20small%20pan%20or%20microwave.%20Add%20it%20to%20a%20large%20bowl%20and%20whisk%20in%20the%20sugar,%20milk,%20eggs,%20vanilla%20and%20lime%20zest.%20In%20a%20medium%20bowl,%20whisk%20together%20the%20flour,%20baking%20powder,%20nutmeg%20and%20salt.%20Fold%20the%20dry%20ingredients%20into%20the%20wet%20ingredients%20until%20incorporated--but%
