A delicious dense oatmeal cookie full of healthy coconut flour and oil.
Ingredients
- 3 cups of oats
- 1/2 cup splenda (or white sugar)
- 3/4 cups coconut flour
- 1/2 tsp baking soda
- 1/2 tsp salt
- 1/2 cup coconut oil
- 1/3 cup apple sauce
- 1 egg
- 2 tsp vanilla
Directions
- Place all of your dry ingredients into a food processor and blend until oats begin to break down (not into a flour but almost). Add wet ingredients and continue to blend until the dough forms into a ball.
- You could probably roll this out between parchment paper and cut into shapes but I just rolled the dough into little balls and after placing on the cookie sheet I pressed each one flat.
- Bake at 350 degrees until the edges begin to brown (maybe 10 minutes). Be careful not to over cook as my first batch was on the dry side.
