Coconut Egg Custard Pie With Selfcrust

Ingredients

  • 3 T flour
  • 1 1/4 c. sugar
  • 1 lg. can evaporated lowfat milk
  • 2 teaspoon vanilla
  • 1 stick butter, melted
  • 3 large eggs
  • 1 c. coconut

Directions

  1. Mix flour and sugar in a bowl, whip it. Add in lowfat milk, vanilla, butter and large eggs. Mix well. Add in coconut. Pour into a greased and lightly floured 9" quiche or possibly pie pan. Bake at 350 degrees for 30 min.
