- 2 cans (14 oz) organic diced tomatoes
- 1 tsp curry powder
- 1/2 tsp salt
- 1/2 tsp pepper
- 1/2 tsp cumin
- 1/2 tsp coriander
- 1 can coconut milk
- 2-3 Tablespoons fresh basil, julienned and sliced down the middle
