Coconut Cookies Recipe

Those cookies are truly a heaven.

  1. Mix flour, salt and baking powder in separate bowl, in another one with a hand mixer (or standing one) mix butter and sugar into a fluffy paste. Don't be lazy, it needs time. I mixed for about 5 minutes, then add eggs and vanilla extract. Keep mixing and slowly add flour to it till you have nice looking dough. Add coconut flakes and buttermilk to it. Put it into refrigerator for about one hour for the butter to set.
  2. Put the heat up for around 190 C and on greased tray put little balls of dough. After the time in the fridge its nice to work with. I also used almonds, putting them inside of the little ball shaped cookies, giving that extra crunch. You can roll the cookies into some coconut (if you have left overs like me) or leave it plain. Bake each tray for 15 minutes. Leave it to set for a while before removing from the tray. Enjoy!

    Please define what a bar of butter is. Is it one stick or 1/4 pound of butter?

    In the US, butter is often sold in pounds wrapped as sticks, with tablespoon marking on each wrapper.
