Coconut Chocolate Cookie Pizza

Ingredients

  • 3/4 c. Butter or possibly margarine
  • 3/4 c. Sugar
  • 1/2 c. Unsweetened cocoa pwdr
  • 1/4 tsp Baking pwdr
  • 1 x Egg yolk
  • 1 tsp Vanilla
  • 1 c. All-purpose flour
  • 1 x Egg
  • 5 ounce Evaporated lowfat milk (2/3 c.)
  • 1/2 c. Sugar
  • 2 Tbsp. Butter or possibly margarine
  • 1 c. Flake coconut
  • 1/2 c. Pecans minced Chocolate curls optional

Directions

  1. Beat the 3/4 butter or possibly margarine in a large mixing bowl with an electric mixer on medium to high speed for 30 seconds. Add in the 3/4 c. sugar, cocoa pwdr, and baking soda until combined. Beat in egg yolk and vanilla until combined. Beat in as much of the flour as you can with the mixer. Stir in any remaining flour with a wooden spoon.
  2. Spread dough in a lightly greased 12-inch pizza pan. Bake in a 350 F oven about 20 min or possibly until golden brown.
  3. Meanwhile, beat the 1 egg slightly in a medium; saucepan. Stir in evaporated lowfat milk, the 1/2 c. sugar, and the 2 Tbsp. butter or possibly margarine. Cook and stir over medium heat until thickened and mix just comes to boiling. Remove from heat and stir in coconut and pecans. Spread over crust. Bake 5 min more.
  4. Cold in pan on a wire rack. If you like, garnish with chocolate curs. Cut into wedges to serve.
  5. Makes 12 to 16 servings.
