Ingredients

  • 1 1/2 lb. raw zucchini, spiralized
  • 10 cloves garlic, chopped fine
  • 2 tbsp. lemon juice
  • 2 tbsp. olive oil
  • 1 lb. pre-cooked/frozen shrimp, tail off, thawed
  • 1/4 cup loosely packed, chopped, fresh basil
  • 5 oz cherry tomatoes, halved
  • 1 medium avocado, cut into chunks
  • Salt to taste after cooking (though I didn’t think it needed any)
