Ingredients
- 6 cups chicken or vegetable broth/stock
- 1 cup chopped, fresh tomatoes
- 1 small, yellow onion, chopped fine
- 1 cup finely diced celery
- 1 cup peeled and sliced thin carrots
- 1 tbsp. oil (I used coconut oil)
- 5 small white potatoes, diced into 1/2 inch cubes or smaller
- 1 tbsp. garlic powder (OR 6 cloves finely chopped garlic)
- 1 tbsp. ground cumin
- 2 tsp. ground coriander
- 1 tsp. ground cardamom
- 2 cups small, split, red lentils
- Salt to taste
