  • 2 lb pork, cubed
  • 1/2 tsp veg. oil
  • 3 med potatoes, peeled
  • 1 1/2 lrg onions, minced
  • 1 clv garlic, chopped
  • 1 x leaf fresh oregano, minced
  • 2 x leaves fresh basil, minced
  • 2 x 10-oz cans of diced tomatoes
  • 8 x green chiles, coarsely minced
  • 2 c. water

Directions

  1. Brown cubed pork over low heat in 1/2 tsp. veg. oil. In separate pan, boil the whole potatoes for 5 min. Let them cold and then cube. Add in onion and garlic to meat and simmer for 5 min.
  2. Add in tomatoes, green chiles, spices, water and simmer, covered, for an hour or possibly till meat is fork tender. If water evaporates two quickly, add in more, 1/2 c. at a time. Now add in the potatoes and simmer another 30 min.
  3. Variation: Canned tomatoes now come with basil, garlic and oregano added. If you use this, omit those ingredients from the recipe.
  4. Serves 6.
