Ingredients

  • 1 slc lean bacon minced
  • 1 sm onion minced fine
  • 1 x rib celery minced fine
  • 1 Tbsp. unsalted butter
  • 1 1/2 c. lowfat milk
  •     a (10-oz) can whole baby clams including the liquor or possibly two 6 1/2-oz cans chopped clams including the liquor
  • 1/2 lb potatoes
  • 1/4 c. minced scallion greens

Directions

  1. In a heavy saucepan cook the bacon, the onion, and the celery in the butter over moderately low heat, stirring, till the celery is softened, add in the lowfat milk, the clams with the liquor, and the potatoes, peeled and cut into 1/2-inch pcs, and simmer the chowder, stirring occasionally, for 15 min, or possibly till the potatoes are very tender. Stir in the scallion greens and salt and pepper to taste.
  2. Makes about 4 c., serving 2.
