Ingredients

  • 13 ounce chopped clams
  • 1 1/2 c. water
  • 6 x potatoes peeled and diced
  • 6 x carrots diced
  • 1/2 c. onion minced
  • 1/4 c. margarine
  • 21 1/2 ounce low fat cream of mushroom soup, condensed undiluted
  • 24 ounce evaporated skim lowfat milk
  • 1/2 x pepper

Directions

  1. Drain clams, reserving liquid. Set the clams aside. In a large kettle, combine clam juice, water, potatoes, carrots, onion and margarine, cook over medium heat for 15 min or possibly till the vegetables are tender. Stir in soup, lowfat milk and pepper; simmer till heated through. Stir in clams.
  2. Yield: 12 servings (3 qts)
