1 cup all-purpose flour ½ teaspoon baking powder ½ teaspoon baking soda ¼ teaspoon salt 1½ ripe bananas, mashed ⅓ cup sugar 1 egg, beaten 3 Tablespoons butter, melted 1 teaspoon vanilla bean paste ½ cup cinnamon chips

TOPPING INGREDIENTS ½ cup brown sugar 2 Tablespoons all-purpose 1 teaspoon ground cinnamon 1 Tablespoon cold butter

Spray a mini muffin tin with non-stick spray In a large bowl whisk the flour, baking powder, baking soda and salt. Set aside. In a separate bowl, mix the mashed bananas, vanilla bean paste, melted butter, beaten egg, and sugar. Stir banana mixture into the flour mixture just until moistened. Preheat the oven to 375 degrees F. Using a small spoon, fill the tin with the batter about ½ full. In a small bowl, mix the brown sugar, flour, and cinnamon Cut the butter into the mixture using a knife and fork or use your fingers. Top each muffin with the crumb mixture Bake for 10 minutes. 3.2.2310

I got scared after I made these mini muffins. The only reason I say that is, they are so so scrumptious.

Addicting too.

These little guys are packed with so much cinnamon flavor that you can barely taste the banana.

I actually overfilled my muffin tins. The crumb topping actually caramelized and I was eating the crisp edges off the muffins as I was taking them out of the tins.

These are the stud muffins on my list of muffins.

Do you want to know what my inspiration for these guys were? I was at the grocery store when I passed by the Hostess cupcake section. I love their new tag line. The sweetest comeback ever. So Hostess fooled everyone into thinking they were going out of business. But I used to love eating their crumb mini donettes. I impulsively grabbed a pack. And I gotta tell you, the minute I got into my car, I tore open the package. I figured, okay. I will eat just one. I bit into it and wow, Hostess is right, sweetest is an understatement. It was so sugary sweet and laden with the taste of butter that I couldn’t wait to come home and make my own.
