Ingredients
- 2 c. whole wheat pastry flour
- 2 tsp cinnamon
- 1 c. minced walnuts
- 2/3 c. Oil
- 2/3 c. honey
- 2 x Large eggs
- 1 tsp vanilla extract
- 2 c. grated Granny Smith apples
- Â Â (approximately 2 medium)
Directions
- Stir together dry ingredients, including nuts, in a medium mixing bowl. Blend oil, honey, Large eggs, vanilla and grated apple together. Add in Oil mix to dry ingredients. Mix only till dry ingredients are moistened. Pour batter into an oiled 9 inch loaf pan. Bake at 325 degrees for 50 to 60 min or possibly till a toothpick comes out clean.
