Cinnamon Apple Charlotte Recipe

Ingredients

  • 1/2 kg Bramley cooking apples The grated rind and juice of 1 small lemon
  • 1/2 tsp grnd cinnamon
  • 170 gm golden brown granulated sugar
  • 30 gm stale bread or possibly cake crumbs110g butter melted and clarified Sugar for sprinkling
  • 6 slc good quality bread
  • 1 x 1.15 l charlotte tin or possibly deep round cake tin (not loosebased) baselined Peel quarter and core the apples. Thickly slice into a heavy based pan.

Directions

  1. Add in the lemon rind and juice cinnammon and 110g of the sugar.
  2. Cover and cook gently stirring frequently till tender.
  3. Taste and add in more sugar if necessary.
  4. Cook uncovered stirring frequently till the apple pulp is thick and all the liquid has evapourated.
  5. Cold then stir in the bread or possibly cake crumbs.
  6. Brush the tin with a little of the melted butter and sprinkle lightly with sugar.
  7. Set the oven at Gas Mark 6 400 degrees F 200 degrees C.
  8. Cut the crusts off the bread and quickly dip the slices into the melted butter.
  9. Use to line the base and sides of the tin cutting the slices to fit and reserving several pcs for the top.
  10. Fill the bread case with the apple mix.
  11. Top with the bread lid.
  12. Bake for 20 min then reduce the heat to Gas Mark 4 350 degrees F 180 degrees C and bake for a further 40 min till golden brown.
  13. Cold for a minute or possibly two then turn out and serve with clotted cream.
  14. Serves 6
