Cinnamon Apple Baked Pancake

Ingredients

  • 1/4 c. Butter or possibly margarine
  • 1 c. Flour
  • 2 c. Lowfat milk
  • 3 x Large eggs
  • 1/2 tsp Salt
  • 2 Tbsp. Butter or possibly margarine
  • 2 c. Cornstarch
  • 1 Tbsp. Cool water
  • 1/3 c. Brown sugar, firmly packed
  • 1/2 tsp Cinnamon
  • 2 med Cooking apples, cored, sliced 1/2 inch

Directions

  1. Heat oven to 400. In a 12 x 8 baking pan heat 1/4 c. butter in oven (5-6 min). In a small mixer bowl combine all other pancake ingredients.
  2. Beat at low speed, scraping bowl often, till well mised ( 1 to 2 min).
  3. Pour melted butter into batter; continue beating till well mixed. Pour batter into warm pan. Bake for 30 - 40 min or possibly till puffed, set in center and golden. Meanwhile in a 10-inch skillet heat 2 Tbsp. of butter. In a small bowl stir together cornstarch and water. Stir brown sugar, cinnamon and cornstarch mix into the butter. Cook over medium heat, stirring constantly, till sugar dissolves and mix bubbles and thickens ( 2 - 3 min). Stir in apples. Continue sooking, stirring constantly, till apples are proportionately coated and crispy tender ( 10 - 12 min). Spoon filling over warm pancake; serve imediately.
