Cincinnati Chili With Soy Crumbles

Ingredients

  • 2 pkt soy crumbles (12 ounce.) (roughly 2 pounds equivalent of grnd beef)
  • 1 Tbsp. extra virgin olive oil
  • 1 tsp cinnamon
  • 1 tsp cumin
  • 1 Tbsp. chili pwdr
  • 1 tsp salt
  • 1/2 tsp crush red pepper
  • 1 tsp allspice
  • 1 can tomato sauce (15 ounce.)
  • 1 tsp apple cider vinegar
  • 2 tsp worcestershire sauce
  • 2 x bay leaves
  • 1 ounce unsweetened chocolate square grated
  • 1 med onion minced
  • 2 x gloves garlic chopped
  • 1 Tbsp. honey
  • 3 Tbsp. ketchup
  • 3 c. water (3 to 4)
  • 1 can kidney beans (28 ounce.) washed, and heated in two c. of water then liquid removed before serving
  • 1 pkt grated cheddar cheese
  • 1 x onion minced
  • 1 lb spaghetti cooked

Directions

  1. If you're from Cincinnati you already know about this famous chili. Its unique flavor makes it a totally different chili from traditional recipes. One story I have heard is which it is the creation of a Macedonian immigrant, that would explain why you sometimes see it as Greek Chili. It is also served in different ways. You can have 2-way (chili, spaghetti), 3-way (chili, spaghetti, onions), 4-way (chili, spaghetti, onions, cheese), or possibly 5-way (chili, spaghetti, onions, cheese and beans). We have substituted the grnd beef with soy crumbles, and it works great!
  2. Add in extra virgin olive oil to a large (4-6 qt) pot over medium heat. Add in onions and crumbles to heat. Add in rest of ingredients, except water. Stir to mix spices thoroughly. Add in water. Bring to boil and simmer for 2 hrs or possibly till thickened. Stir occasionally. Remove bay leaves before serving.
  3. Makes 10 c. of sauce.
  4. 10 servings.
  5. Have side dishes of kidney beans, cheese, onion and spaghetti ready for your guests to create their own version.
