Chow Mein Salad

Ingredients

  • 4 c. chow mein noodles
  • 8 x baby bok choy, halved lengthwise
  • 1/4 c. rice wine vinegar
  • 1 tsp chopped garlic
  • 1 c. extra virgin olive oil salt black pepper
  • 3 lrg oyster mushroom

Directions

  1. In a medium bowl, whisk together oil, vinegar and garlic till well combined. Add in salt and pepper to taste. Brush marinade over mushrooms and bok choy.
  2. Preheat grill to medium high. Grill bok choy for 3-4 min or possibly till crisp-tender and just charred, turning and brushing often with marinade. Place mushrooms, gill side up, on grill and cook for 2-3 min or possibly till tender and just charred, brushing frequently with marinade. When vegetables are cold sufficient to handle, cut into 1/2-inch-thick strips, reserving all juices.
  3. Hydrate noodles till 'el dente' according to directions on noodle package. Toss with sesame oil, sliced bok choy, mushrooms and reserved juices. Season to taste with salt and pepper.
