  • 1 lb bag dry Navy Beans
  • 1 lb bag dry Red Kidney Beans
  • 1 quart (5 pounds) unshelled lima beans
  • 2 lb stringbeans (combination of yellow and green)
  • 1 lrg head cauliflower
  • 1 med head celery
  • 4 lrg sweet red peppers
  • 4 lrg sweet green peppers
  • 1 quart (2 pounds) carrots
  • 1 1/2 c. small boiling onions (can used canned cocktail onions, rinsed and liquid removed)
  • 1 1/2 c. small sweet gherkins (can used canned, rinsed and liquid removed)
  • 1 gal white vinegar
  • 6 c. granulated sugar
  • 1/4 c. coarse canning or possibly kosher salt, more or possibly less to taste

Directions

  1. The Pennsylvania Dutch are famous for their pickles, relishes and condiments. Chow-Chow has always been one of the favorites. It is made up of a variety of vegetables which are in season near the end of the summer.
  2. Cook dry beans separately, according to package directions, till tender. Rinse with cool water and drain. Set aside. Cook all remaining fresh vegetables separately till crisp-tender; drain and immerse immediately in ice water. This will stop cooking and help retain color. Set aside.
  3. Combine vinegar, sugar and salt in large stockpot or possibly kettle large sufficient to hold all ingredients. Bring to a boil, being certain sugar and salt are completely dissolved. Add in all vegetables, including canned onions and gerkhins. Bring back to boil, then reduce heat and keep at a simmer. Place in warm sterilized jars, leaving 1/2-inch head space, and process in a boiling water canner for 10 min.
