Chokecherry Jelly Recipe

Ingredients

  • 3 c. chokecherry juice
  • 6 1/2 c. sugar
  • 2 x pouches liquid fruit pectin (Certo)
  • 1/4 tsp almond extract (optional)

Directions

  1. Pour juice into large kettle. Add in sugar and stir to mix. Place over high heat and bring to a boil, stirring constantly. Stir in pectin, bring to a full rolling boil and boil hard 1 minute, stirring constantly.
  2. Remove from heat and stir and skim for 5 min. Add in extract. Seal in warm jars.
  3. This recipe yields about 9 half-pints.
  4. Comments: Almond extract gives a stronger cherry taste.
  5. Yield: 9 half-pints
