Ingredients
- 3 x Large eggs
- 1 c. Vegetable oil
- 2 c. Sugar
- 1 Tbsp. Vanilla extract
- 2 c. Shredded, peeled zucchini
- Â Â One medium, about
- 2Â 1/2 c. Flour
- 1/2 c. Cocoa
- 1 tsp Salt
- 1 tsp Cinnamon
- 1/4 tsp Baking pwdr
Directions
- Preparation Time: 1:00
- In a mixing bowl, beateggs, oil, sugar and vanilla. Stir in zucchini. Combine dry ingredients; add in to zucchini mix and mix well. Pour into 2 greased 8 x 4 x 2 loaf pans.
- Bake at 350 for hour or possibly till bread tests done.
- Yield: 2 loaves.
