  • 1 x 14oz. package caramels
  • 1 x 5z. can evaporated lowfat milk
  • 1 1/4 c. minced pecans, divided
  • 1 x 9 inch chocolate crumb piecrust
  • 1 x 3oz. package softened cream cheese
  • 1/4 c. lowfat milk
  • 1/2 c. lowfat sour cream
  • 1 x 3.9oz. package instant chocolate pudding mix
  • 1/2 c. fudge topping

Directions

  1. Place caramels and evaporated lowfat milk in a heavy saucepan. Heat over medium-low heat, stirring continually, till smooth, about 5 min. Stir in 1 c. minced pecans. Pour into pie crust. Combine cream cheese, lowfat sour cream and lowfat milk in blender. Process till smooth. Add in pudding mix; process about 30 seconds longer. Pour pudding mix over caramel layer, covering proportionately. Chill, loosely covered, till set, about 15 min. Drizzle fudge topping over pudding layer and sprinkle with remaining pecans.
