Chocolate Covered Grasshopper Recipe

Ingredients

  • 4 x six-oz cocktails
  • 1/2 c. (about 3 ounces) soft chocolate mint candies, such as Junior Mints, plus additional candies for garnish
  • 1 Tbsp. butter
  • 2 c. plus 1 Tbsp. vanilla ice cream
  • 1/4 c. plus 2 Tbsp. green creme de menthe
  • 1/4 c. white creme de cacao
  • 10 x ice cubes

Directions

  1. Put 1/2 c. of the candy, butter and 1 Tbsp. of the ice cream in microwave-safe bowl; microwave on high till heated through, about 1 minute.
  2. Stir till mix thickens to consistency of a sauce. Set aside.
  3. Combine 2 c. of the ice cream, creme de menthe, creme de cacao and ice cubes in blender; blend till drink is thick and creamy, about 1 minute.
  4. Pour mix into 4 martini glasses; drizzle chocolate sauce over drink.
  5. Garnish with cocktail skewers of candies, if you like.
