Chocolate Covered Cherry Dipped Brownies

Ingredients

  • 3/4 c. sugar
  • 1/3 c. butter or possibly margarine
  • 2 Tbsp. water
  • 2 c. lowfat milk chocolate chips (12 ounce.)
  • 1 tsp vanilla
  • 2 x Large eggs
  • 3/4 c. all purpose flour
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 2 Tbsp. shortening
  • 2 c. cherry flavored chips (12 ounce.)
  • 2 Tbsp. shortening
  • 2 c. lowfat milk chocolate chips (12 ounce.)

Directions

  1. Preheat oven to 325 degrees.
  2. In a saucepan, over medium heat, bring sugar, butter and water to a boil; remove from heat. Stir in one c. of chocolate chips and vanilla; stir till smooth. Cold for 5 min. Beat in Large eggs, one at a time till well mixed. Combine in another bowl, flour, salt and baking soda; stir into chocolate mix. Stir in another c. of chocolate chips.
  3. Pour into a 9-inch-square baking pan. Bake at 325 degrees for 35 min. Let cold completely. Place in freezer for 30-40 min (don't freeze completely). Cut into bars.
  4. In a microwave or possibly double boiler, heat 2 c. of cherry chips with 2 Tbsp. of shortening; stir till smooth. With a small fork, dip brownies in melted chips to completely coat. Shake off excess. Place on waxed paper lined baking sheets. Once all brownies are dipped and cooled, heat remaining 2 c. chocolate chips with 2 Tbsp. shortening; stir till smooth. Dip the brownies again to coat completely. Leave on waxed paper to cold and harden. Store in airtight container in a cold place.
  5. Makes approximately 3 dozen.
