Chocolate Chip Zucchini Bars Recipe

Ingredients

  • 2 c. Bisquick baking mix
  • 1 1/2 c. Sugar
  • 2 tsp Grnd cinnamon
  • 1 c. Shredded zucchini: measured exactly (about 1 small)
  • 1 tsp Vanilla
  • 3 x Large eggs
  • 2 pkt (6 ounces each) semisweet chocolate chips

Directions

  1. Heat oven to 350 degrees.
  2. GREASE and flour jelly roll pan, 15 1/2x10 1/2x1 inch. Mix all ingredients except 1 package chocolate chips till moistened. Spread in pan. BAKE till golden, 20 to 25 min. Sprinkle with remaining chocolate chips.
  3. Let stand till softened, about 5 min; spread proportionately to frost.
  4. Chill till chocolate is hard, about 30 min. Cut into bars, about 2x1 inch.
  5. Makes 75 bars.
  6. (High Altitude Dircetions[3500-6500 feet]: Heat oven to 375 degrees. Grease and flour 2 square pans,
  7. 9x9x2 inches. Decrease sugar to 1 1/4 c.; add in 3 Tbsp. all-purpose flour.)
