Ingredients

  • 3 x Egg
  • 1 c. Oil
  • 1 tsp Vanilla
  • 3 c. Flour
  • 1 tsp Baking pwdr
  • 1 1/2 tsp Cinnamon
  • 1/2 c. Coconut
  • 1/4 c. Chocolate chips
  • 1/4 c. Raisins
  • 1/4 c. Hazelnuts or possibly almonds or possibly walnuts, coarsely minced

Directions

  1. Beat Large eggs and sugar well, add in vanilla then dry ingredients.
  2. Chill several hrs or possibly overnight.
  3. Form into logs 1-2 inches in diameter. Wet hands help keep dough from sticking to hands. Bake at 350 degrees for 35-40 min. Remove from oven, allow to cold for 10 min then slice cookies 1/2 inch thick. Toast at 300 degrees till very dry.
