Ingredients

  • 8 ounce confectionery sugar
  • 8 ounce water
  • 3 1/4 ounce maple syrup
  • 6 1/2 ounce dark chocolate, (72% cocoa)
  • 4 ounce 15% cream
  • 1 Tbsp. dark rum
  • 1 x vanilla, bean, scraped

Directions

  1. Put the sugar, water and maple syrup into a saucepan and bring the liquid to a boil over a medium heat. Stir constantly over a medium heat for a minute. Remove the liquid from the burner and stop stirring for approximately 3 min. Add in the chocolate, stirring again till it is all melted. Then slowly add in the cream, the rum and the vanilla bean seeds. Mix well.
  2. Use as a garnish on cakes, ice cream, pies and with fresh fruit.
  3. Yield: 500 millilitres of rich creamy velvety chocolate sauce.
