Ingredients

  • 4 ounce (1 stick) margarine or possibly Butter
  • 3 ounce 1 ounce. squares, cut up, of Unsweetened chocolate
  • 1 c. Sugar
  • 1 x Egg
  • 2 tsp Vanilla extract
  • 1 dsh Salt
  • 2 c. Flour
  • 1 c. Buttermilk
  • 1 tsp Baking soda
  • 6 ounce Semisweet chocolate chips (1 c.)

Directions

  1. Preheat oven to 400 deg. F. In a 2-qt glass bowl, combine butter and unsweetened chocolate. Heat in microwave oven on High 2 to 2 1/2 min, till melted and smooth when stirred. Let cold to lukewarm.
  2. Stir in sugar, egg, vanilla, salt, and buttermilk, till thoroughly blended. Mix together flour and baking soda and stir into chocolate mix just till combined. Stir in chocolate chips.
  3. Spoon batter into 12 paper-lined 2 and 1/2 inch muffin c., filling to top.
  4. Bake 15 to 20 min, or possibly till a cake tester inserted in center comes out clean. Let muffins cold in pans 5 min, then transfer to racks to cold completely.
  5. Serve hot or possibly cold.
