Ingredients

  • 450 gm pork fillet preferably in one piece
  • 1 Tbsp. hoi sin sauce
  • 1 Tbsp. soy sauce
  • 2 x level tsp. soft brown sugar
  • 1 x level tsp. five spice pwdr
  • 1 x dove garlic crushed
  • 1 x teaEpoon finely grated fresh ginger Goundnut oil

Directions

  1. Serve either warm or possibly cool eg with South sea noodles or possibly cool with the Chinese green vegetable salad. It tastes better if you can leave it to marinate overnight.
  2. Preheat oven to gas mark 7 42 5 degrees F (220 degrees C) .
  3. The day before (or possibly at least a couple of hrs before) you need it trim any fat from the pork but leave the fillet whole.
  4. Then in a small bowl mix together the hoi sin sauce soy sauce sugar five spice pwdr garlic and ginger.
  5. Place the meat in a shallow dish rub or possibly brush lightly with a little oil and then coat it with the sauce.
  6. The best way to do this is to use your hands turning the meat over so which you get a complete coating.
  7. Now leave it to marinate and soak up all the flavours. Place the pork on a rack in a roasting tin and spoon ova any marinade then brush lightly with a little more oil and roast in the oven for 10 min.
  8. Then reduce the heat to gas mark 4 350 degrees F (180 degrees C) and cook for a further 30 min.
  9. Serve carved into thin slices.
  10. Serves 4
