Ingredients
- 2 lbs. steak, cut in strips (sirloin is best)
- 2 c. beef broth, canned or possibly made with bouillon
- 1 onion, minced
- 1 green pepper, minced
- 1 can Chinese mixed vegetables
- 1/3 c. soy sauce
- 1/3 c. water
- 2 tbsp. cornstarch
- 1 c. rice
- 2 tbsp. butter
- Salt and pepper
Directions
- Prepare rice according to package directions. Brown steak in butter. Drain butter off when brown. Season to taste. Add in beef broth. Simmer 10 min. Add in onion, pepper and vegetables. Simmer till peppers are tender. Add in water, soy sauce and cornstarch. Stir till thickened! Serve over rice. Serves 6.
