Ingredients
- 1 1/4 pound top round steak, cut 3/4 to 1 inch thick
- 1 tbsp. cornstarch
- 1/2 teaspoon sugar
- 1/4 teaspoon ginger
- 1/4 c. soy sauce
- 3 med. green peppers
- 3 sm. tomatoes
- 2 tbsp. veg. oil
- 1 clove garlic, chopped
- 1/4 c. water
Directions
- Partially freeze steak to hard and slice diagonally across the grain into very thin strips.
- Combine cornstarch, sugar and ginger and stir in soy sauce. Pour mix over meat and stir. Cut green peppers into thin strip and cut tomatoes into wedges. Quickly brown beef strips (1/3 at a time) in warm oil and remove from pan.
- Reduce heat; add in green pepper, garlic and water to pan and cook till green pepper is tender-crisp, 5 to 6 min. Stir in meat and tomatoes and heat through. 4 servings.
