Chimichangas (Chimies) Recipe

Ingredients

  • 1 lb Cube steak, (shredded beef)
  • 2 x Tomatoes, minced
  • 2 x Onions, minced
  • 1 x Cloves of garlic, chopped, (up to 2)
  • 1 tsp Cumin
  • 1 tsp Chili pwdr
  • 1 can (small) of mild minced green chilies Flour tortillas - frzn, steam to roll
  • 1 c. Shortening, in skillet Shredded cheddar cheese
  • 1 pkt Velveeta Jalapeno Cheese
  • 1/2 c. Salsa - picante/chili
  • 1/2 stk melted butter

Directions

  1. Fry meat in separate pan. In 1 teaspoon veg. oil add in minced tomatoes, onions, spices, and garlic. Cook 5 min on high and 10 min on simmer. Put in bowl with beef and green chilies. Steam tortillas. Put a big spoonful of filling and a handful of cheddar on each tortilla. Roll up and seal ends (like an egg roll). Fry in warm Crisco till golden. Drain and serve with cheese sauce.
  2. Cheese Sauce Heat butter and put Velveeta in. When 1/2 melted put salsa in.
  3. When thoroughly melted, spoon over chimichangas.
