Ingredients

  • 2 lb center-cut prime sirloin of beef
  • 1/2 c. vegetable oil
  • 1 1/4 stk whole butter cut in pats
  • 1 c. Creole mustard
  • 2 Tbsp. mayonnaise
  • 1 Tbsp. Worcestershire sauce
  • 1 tsp freshly-grnd black pepper
  • 1/3 c. paprika
  • 1 Tbsp. garlic pwdr
  • 1 Tbsp. onion pwdr
  • 1 tsp freshly-grnd white pepper
  • 1 tsp freshly-grnd black pepper
  • 1 tsp cayenne pepper
  • 1/2 tsp thyme
  • 1/2 tsp basil
  • 1/2 tsp oregano
  • 1/4 c. salt Red onions sliced Capers

Directions

  1. Creole Mustard Sauce: Mix together mustard, mayonnaise, Worcestershire and pepper. Chill.
  2. Blackened Seasoning: Mix all ingredients well. (Makes 1 c.)
  3. Preheat oven to 350 degrees. Trim fat to 1/8-inch on sirloin, coat with oil and dredge on all sides with seasoning. Place sirloin in a well-heated (warm) iron skillet. Add in 2 to 3 pats of butter. Cook 5 min on each side, adding butter as needed.
  4. Transfer to oven and roast till meat reaches internal temperature of 114 degrees. Remove and chill overnight.
  5. Slice sirloin into 12 even slices and arrange on chilled salad plate. Serve with a 2-oz pool of mustard sauce and garnish with red onion and capers.
  6. This recipe yields 6 servings.
